Shock Freezers

Why use a shock or blast freezer?

Freezing your ice cream fast minimises the size of ice crystals formed within the product. Unlike the macro crystals that are formed on slow freezing, the micro crystals do not damage the structure of the product on defrosting so it keeps its original consistency without the loss of any liquid from the structure.

Blast freezers can harden off the outside of the ice cream in around 25 minutes. This allows artisan ice cream makers to copy the current trend in Italy which is to pile ice cream high in the Napoli trays as it comes out of the batch freezer, and to stop it from melting away once it’s put into a display cabinet.

Other benefits to ice cream specifically include maintenance of high overrun, helps to keep decoration in place, reduction in energy, staff and production costs, a better display of ice cream in cabinets, and an increase in the lifetime of the ice cream.

Tekna Shock Freezers

Space is always at a premium in any business. Tekna storage freezers have been carefully designed to store the maximum amount of ice cream in the minimum amount of space. They are designed for 360 x 165 x 120mm ice cream pans and can take 48, 64 or 96 pans when full. The frost-free freezers has automatic defrost settings and ventilated refrigeration for a uniform cabinet temperature. The freezers also feature electronic temperature control from +5C to –25C.

The range of cabinets includes positive cabinets and shock freezers designed for ice cream pans. With a temperature range of –18 C to –40C, these cabinets, when full, can take the core temperature of your ice cream down to around –18C in less than 4 hours. When you don’t need the shock freeze option, you can simply alter the settings to use it as a storage cabinet.
