RSS supplies to Michelin chef in LondonI wonder what it must be like to follow in the footsteps of Gordon Ramsey? That’s exactly what two star Michelin chef Hélène Darroze is doing at the Connaught Hotel in London. The kitchens have been ripped out and refurbished to meet Ms Darroze’s requirements including a new Corema Thermogel 4-8 combination machine in the pastry kitchen. Under the management of Kirk Whittal who also works for Darroze on the Left Bank in Paris, the pastry chefs will use the Thermogel to cook large quantities of ice cream mix and freeze it straight down to ice cream, as well as lemon curds, Crème Patissiere, in fact anything that requires cooking and cooling. The machine was bought in order to allow them to meet the quantities required for the size of the restaurants at the first class hotel. Find out more about the Thermogel batch freezer. Looking after your equipmentIf you ever needed a reason to justify the expense of servicing your ice cream equipment then here it is: keep your EHO happy! One of the questions they will routinely ask you is how do you know that your thermometer is reading the correct value? The only way is to check it using a calibrated thermometer that has been recently certified to prove that it is showing the correct temperature. Our maintenance programme on your pasteurizer or mix cooker includes checking and recalibrating your equipment thermometer if necessary. We will give you a certificate of our calibrated thermometer along with a print out of your thermometer reaching 85c to file for the benefit of the EHO. A bit further north in Perth, Scotland, Richard Kelly from Lickwid is celebrating coming second in the Highland Show for his Strawberry ice cream. Judge for the day Chef Nick Nairn described it as “bloody good strawberry” – and you can’t say fairer than that! Russell is learning all about ice cream equipment and will be the one to install and demonstrate any new machines that you may purchase. He is being trained to support Paul Lewis in our technical department to solve any technical issue that may arise with your equipment.
